How to control your weight with soup!

Are you aware of the benefits that soup can have on your diet?

It is important to eat soup whether your goal is weight loss or maintenance. Warm, tasty, and filling, soup is a great meal. You can use it to curb your appetite prior to a meal. You can include soup in your meals. Soup can be a filling meal. The choice of options is crucial.

Choose from a variety of soups

  • Soups based on broth
  • Filling soups
  • Low Fat/LowCarb/LowCalorie soups

Avoid soups:

  • Rice, noodles, soups with croutons and cheese
  • High-calorie soups
  • High Fat/HighCarb/HighCalorie soups

The Cream of Cauliflower and Leek Soup:

  • Enjoyable and rich
  • There is cream, but there’s no cream
  • Fillings for the Very Full
  • It’s easy-peasy to prepare, with only three main ingredients.

Cream of Cauliflower and Leek Soup

  • Leeks – 2
  • Cauliflower – 1

I like Swanson chicken stock, but you can also make your own.

Salt, pepper white, dill

  1. In a large pot, place the leeks chopped (white part). Add 1/8 teaspoon salt. Pour enough chicken broth over the leeks to cover them, then sauté until softened.
  2. Add the cauliflower to the pot. Pour the remaining chicken broth, add 1/4 teaspoon salt and 1/8 tablespoon white pepper. Bring the mixture to a boil, then reduce heat and simmer for a few minutes until it is very soft.
  3. Allow the soup to cool down a little. Vitamix is my favorite blender for making soups creamy and smooth. Use a stick blender, which is a handheld device. This will produce a more chunky soup.
  4. Use a slotted teaspoon to place the leeks and cauliflower into the blender. It may be necessary to work in small batches. Use some broth to thin the soup if it is too thick.
  5. I like to add dill as a garnish. Enjoy!
  6. It is still full of flavour. The leftover broth is full of flavor.

This recipe is for you if your favorite soup does not include pasta.

Egg Noodle Chicken Broth

1-2-3-Egg Noodles. It’s so easy to make!

Ingredients:

  • 1 egg plus 2 whites, or
  • 1 white and 2 yolks
  • Water – 1 tablespoon
  • Salt pinch

The procedure is simple and quick. 1-2-3!

  1. Eggs, salt, and water should be beaten together. Heated a non-stick crepe pan, or a skillet that has been sprayed pam. Pour 1/4 cup into the pan, and then turn it to coat the bottom evenly with the mixture. Once the egg mixture is set, turn it gently (it will look like a crepe). Let the bottom side cook. Once done, remove the (crepe). Place on a plate. Continue to cook mixture in same manner.
  2. Roll tightly and let crepes cool.
  3. Slice crepes to desired thickness (about 1/2 inch).

Broth:

Swanson Chicken broth is my favorite. This recipe calls for one 32-oz. carton. carton. You can also make your own broth.

Add two cups chopped mushrooms to broth

All together-Heat up the mushroom broth, then add in the egg noodles. Garnish the dish with scallions.
