The Cream of Cauliflower and Leek Soup:
- Enjoyable and rich
- There is cream, but there’s no cream
- Fillings for the Very Full
- It’s easy-peasy to prepare, with only three main ingredients.
Cream of Cauliflower and Leek Soup
- Leeks – 2
- Cauliflower – 1
I like Swanson chicken stock, but you can also make your own.
Salt, pepper white, dill
- In a large pot, place the leeks chopped (white part). Add 1/8 teaspoon salt. Pour enough chicken broth over the leeks to cover them, then sauté until softened.
- Add the cauliflower to the pot. Pour the remaining chicken broth, add 1/4 teaspoon salt and 1/8 tablespoon white pepper. Bring the mixture to a boil, then reduce heat and simmer for a few minutes until it is very soft.
- Allow the soup to cool down a little. Vitamix is my favorite blender for making soups creamy and smooth. Use a stick blender, which is a handheld device. This will produce a more chunky soup.
- Use a slotted teaspoon to place the leeks and cauliflower into the blender. It may be necessary to work in small batches. Use some broth to thin the soup if it is too thick.
- I like to add dill as a garnish. Enjoy!
- It is still full of flavour. The leftover broth is full of flavor.
This recipe is for you if your favorite soup does not include pasta.
